Veggie Scramble

This day started off with a bike ride to the supermarket to get some fresh veggies and vinegar. The best part about this recipe (besides being vegan) is that, depending on what kind of tofu you use, it is very low in fat. The taste comes mainly from the peppers and spices, unless you go heavy on the vinegar. There is no salt and therefore very low sodium, again depending on your choice of tofu.

Ingredients:
1 bowl of chopped broccoli
1 bowl of sliced mushrooms
3 little dried japone peppers (spicy!)
1 green pepper
1 medium size onion
1 package of extra firm tofu (12 ounces or more)
Some rice vinegar (I use red pepper flavor)

Spices:
Turmeric
Thyme
Cumin



Throw a few splashes of vinegar in a pan, turn the stove up to med-hi, and add the chopped onion and green pepper.



Let these sautee for a minute or so, then add the broccoli and mushrooms.



Smash the dried peppers up with your fingers.



Add the rest of your spices to the dried pepper (about 2-3 teaspoons of each).



Get your tofu ready. Be sure to let it drain before you dice it up or everything could get a little soggy at the end.



Add the tofu and spices to the vegetables in the pan.



Mix it all together for a few minutes more. Be sure not to crumb the tofu all up, or you'll just have tiny bits of it to eat.



Then, serve it up in a bowl with some OJ or hot chocolate to cut the spice. What a great breakfast!



Variations:
You can use pretty much whatever you want in this, that's another reason why it's so great. Say you're a little groggy from a long night of quaffing flagons of ale with your lusty wench (or otherwise termed life partner) and you don't have the mental capacity to read a list of grocery items. Simple, just throw a bunch of chopped up "stirfry-ish" vegetables in the pan and you're good to go. Zucchini, potatoes, root vegetables, yellow squash, or any tasty meat substitutes you might have lying around are good ideas for starters. Don't let the man hold you down and tell you that you don't know what's tasty. It's your body. Fight back.
