Super Fresh Salsa

I love salsa but I got sick of all of the cooked versions that they sell at the grocery store (and they never had enough cilantro in it for me -- I love cilantro).
When you go to a Mexican restarant, they serve fresh salsa. So, I decided to try to make my own fresh salsa. This is what I came up with. It's very simple and very fresh.

Ingredients:
1 Large tomato or a large tomatoes worth of small ones (make sure they are very ripe)
1/2 jalapeno for mild spice, or a whole jalapeno for medium
2 cloves garlic
Onion and cilantro (however much you like)
Salt
Lime Juice













Cut tomato, onion, and jalapeno into manageable pieces

Put into food processor with garlic and cilantro
Add about a teaspoon of salt and a tablespoon of lime juice
Mix in food processor for about 30 seconds


















Taste test and add more of any of the ingredients to suit your taste.















If you like chunkier salsa chop ingredients by hand and let it marinate in the lime juice for about an hour but make sure you cut the garlic and jalapeno into small pieces.

    I used to work at a Mexican restaurant that served garden fresh salsa (which was in fact, not so fresh). One regular couple always brought their own bottle of salsa with them. They would just eat free chips and their own salsa all day. Maybe every once in a while they would buy Cokes but they were pretty much just mooching.

    The worst part is. This was at Chi-Chi's and the salsa they brought in was Chi-Chi's brand salsa.

    This all occured at a very low point during my emergence into adulthood.
